I ran some more updates and it appears to have been fixed! Thank you Sebastian,
for the suggestions :)
I'll keep this bug report open for another few days before marking it as
fixed just in case.

I even added the official GNOME 3 PPA, checked for updates, ran all
available updates, including what you said... Nothing. Same issue :/
