I have mutter 3.36.7+git20201123-0.20.04.1 installed from focal-proposed
for over two weeks now and gnome-shell, with two monitors, is running
great without any problems.

@Leon, what do you mean?
That fix will be included in the next SRU once that fix has been
approved (and merged) upstream, so for now it's better to get a
verification of this version that includes some mayor changes, then
cherry-picking that fix will be an easier and quicker task.

This shuold be the main reason mutter 3.36.7 to be update ASAP.
Mutter 3.36.6 broke the input method on Chinese/Japanese/Korea users, As
a Chinese user I can't type anything under Gnome with mutter
The only leak fix in 3.36.7 is

I use 2 Ubuntu 20.04 machines daily for work, and because of the
significant uptime I have seen these memory leaks occur. I would greatly
