I know this is old, but there is still no setting for this in Evolution.
So, if you want to fix the font problem in the mean time, type the
following into a terminal, and restart Evolution:
gsettings set org.gnome.evolution.mail vertical-view-fonts true

It has been requested in the upstream report that this be made the
default, but no action has been taken. The justification of difficulty
in differentiation between subject and sender is suspect at best -
alternate messages are highlighted, and the default monospace font is
much more of a
no reply, but i've tested this and works fine for me with hardy, marking
it as fix-released, thanks.

according to the upstream bug that seems to be fixed now:
/apps/evolution/mail/display/vertical_view_fonts key (true/false)
True - same fonts
false - current behavior.
Fixed in trunk/will be there in 2.21.91.
May someone else confirm the right behavior now? thanks.

I get the same thing with xubuntu 8.04/evolution 2.22.0ubuntu2. I can't
seem to get a screenshot at the moment, but it is as Mike describes: the
subject line in vertical preview has a seemingly stretched monospace
font.
