The operation y root of x is available by clicking Inv and then
x^y in scientific mode. The cube root of x is then calculated as
x^(1/3).

Thank you for your bug report. I've sent this upstream as a feature
request to http://bugzilla.gnome.org/show_bug.cgi?id=578032. In the
meantime, you can use the x^y key and use a fractional power to achieve
the results you want
