So, my problem turns out to be related to this bug:

The /desktop/gnome/interface/monospace_font_name gconf key was set to a
font that I no longer had on my system, and so evolution fell back to
using a variable font.

This is still a problem for me after the latest Oneiric updates and
3.1.4-0ubuntu3.

no way to set fixed-width font for reading
After upgrading to Oneiric, I too see this. I have tried various
settings in Edit/Preferences/Mail Preferences/General to no avail. It is
currently set to 'Monospace 10' for both standard and fixed width fonts,
and all email previews are displayed as variable width. This is not
great for reviewing
Cannot confirm followed the same steps Veger described and it works fine
after close/reopen the program, could you perhaps try with a new user
just to see if your profile is somewhat corrupted or not? Thanks for the
testing Marcin.

Evolution was restarted after font change.

Did you try to set the font in Edit-Preferences-Mail
preferences-General-Message Fonts?
Uncheck 'Use the same fonts as other applications'
Pick 'Monospace' as the 'Standard Font'
Works for me in version 2.32.2 (natty)
