Looks like I've got the same kind of bug: Gnome-panel disappears when switching
on/off the second display using twinview via nvidia-settings :
- gnome-panel disappears, but it's still running: Cannot register the panel
shell: there is already one running.

Closing the bug report for now, please re-open it if you can provide us
more info about it, also would be really nice if you may try to
reproduce it with the the live environment of the Desktop CD of the
development release - Gutsy Gibbon. You can grab a CD Image from here:

In the screenshot I made a circle around the gnome-panel I'm talking
