I faced exactly the same problem.
I don't want to install the entire set related to restricted formats but simply
to get Sound-Juicer to take that format into account.
Isn't it a procedure to make it learn new defined entries ?
If not, what is the point to have a menu to add them ?

I found the issue:
The default string provided for mp3 binds the output of lame to id3demux (that
would try to remove ID3 tag) instead of id3v2mux (that will add them).
Once corrected (and I reloaded sound-juicer) it appeared in the list !!!
