Is Evolution configured with your POP3/IMAP servers? Is everything set up correctly? Is your SMTP server also configured? Couldn't this be simply done with piping? Unless I'm not understanding, you could ps aux | less just fine, couldn't you? Or you could use the and operators. It seems, rather than completely disregarding this, there should be a standard for this kind of thing. All Gnome apps should have unified key settings (ctrl+t opening a new tab, for instance.)
