I can confirm the bug (Gutsy). I have a c++ header file and nautilus displays the right file type but if I click on the file nautilus says it is a HTML document. Opening the file with gedit results in a false highlighting mode because it assumes it is a HTML document. I am being bugged by this bug. In my case, I am viewing files in Nautilus in list mode, sorted by Type. I'm looking at a folder with files ending in .c.BAK. Their type is given as backup file. But when I click on the file, it changes type to C source code. Because I'm viewing sorted by Type, the file disappears from view, I guess somewhere further down the list. That's a nuisance because I was trying to select all the backup files by clicking on the first then shift-clicking on the last. It can't be done! My Nautilus 2.18.1 from Feisty does something like this with most of my files. For example it first shows ogg files as: ogg multimedia; application/ogg (Type; MIME) when you try to double-click at it, it will change after the first click and a completely different file will be activated by mistake Now the File shows like: Ogg Vorbis audio; audio/x-vorbis+ogg (Type; MIME) You can see that there is a difference, caused by some kind of second file check..
