I have been in this problem for a while. I wanted to disable Alt-F by
unchecking the option "Enable menu access key (such as Alt+F to open the
File menu)" but it did not work at all.

This problem also affects me (and it is still present even though I have
"Launch help browser" disabled in "System/Keyboard Shortcuts". I'm
using Ubuntu Jaunty.
My "use case" is that I'd like to be able to customise all of the
function-key actions in Gnome-terminal to whatever I want them to be.
Looking into System -> Keyboard Shortcuts I can see now a hint
"To edit a shortcut key, click on the corresponding row and type a new
key combination, or _press *backspace* to clear_."
However the hint didn't make it into shortcut dialog of gnome terminal

This is a tricky one. I was googling it for half an hour and didn't find
a solution. Then by a trial/mistake I found out that if you go to change
the shortcut you want to disable and hit "backspace", it gets disabled!

This bothers me as well. I would like to use gnome-terminal for my
console bassed ERP app, but its claiming the function keys is a non-
starter.
