I can confirm that I now see Thunderbird as the default under preferred
applications. Unfortunately, this doesn't change the email button on
the dash - that still takes me to Evolution. However, that's a separate
bug, I suppose.

Mozilla ThunderBird through Ubuntu Software Center, but in Preferred
Applications under Mail Reader I can not select ThunderBird?
