This also affects me. This seems to be a Jack Sense bug for this
model of USB headset. I have run the ALSA Information script v0.4.61

Supposedly it does support 7.1, it doesn't just work out of the box on
Linux that way. I have mine set up for Stereo output / Mono Input. It
is not necessarily important that it supports 7.1 for my own purposes
either. Because frankly very few, if any, applications I use regularly
support 7.1
