Just because the conversation is encrypted end to end doesnt mean you cant log locally. Dont know how empathy does this, but in pidgin it can be set up easily. There is even an option to omiss the conversations that are encrypted.
I dont really like that distinction, because it implies all encrypted communication is sensitive. There were a few minor things that could be improved (e.g. automatically resizing the contact list), but that is not the topic here. The reason why I won't switch to empathy from pidgin is the missing OTR support (http://www.cypherpunks.ca/otr/ ). This is a really important feature because no one should read your messages.
