Further to comment #9 this issue seems fixed. I tested with gnome-
software version 3.38.1-1 in the current development version (impish)
and the 'Remove' button was displayed immediately after installation
completed.
xenial, yakkety and zesty are no longer supported so closing bug report.

I am unable to duplicate this bug with gnome-software 3.24.1 in Ubuntu
17.10 Alpha.
The bug is still present in Ubuntu 17.04 although it feels to me like
it's closer to working than it was with earlier versions.

I can confirm this bug. The "Install" button still shows instead of
"Remove" even after closing and reopening Software. The only place I see
a "Remove" button for the app I installed is if I click the "Installed"
button in the top toolbar.
