You can clear the cache by going to chrome://settings/clearBrowserData.
Can you confirm that after that, previews are generated correctly?

I am quite sure that the issue has been fixed in the new Chromium (for
example I can not reproduce the bug on Google Maps anymore), but the
havoc wreaked by the issue is still here. For example I still have
distorted previews of sites on the home page, I suppose they have been
cached.

This sounds like it could be NVIDIA-specific.
Is the issue fixed with the newest version of chromium (66, will be
available soon as an update, in the meantime you can get it from that
PPA: https://launchpad.net/~chromium-team/+archive/ubuntu/stable)?

Most interestingly, the distortion persist even when downloading a
picture and viewing it with, e.g. Eye of GNOME locally.
The attached image has been downloaded via right-click "Save image
as..."
