For me NFS seems to match nfs-common (it is the fourth element in the
search results), however it's not shown by default, I had to click Show
technical items on the bottom of the pane to see it, otherwise I had
only three results, and nfs-common was not there. Did you try the show

I've figured out what triggers the behaviour, it happens whenever we use
the touchscreen.

No problem. Happens :)
In short: I'm pretty sure now, that lightdm is creating these files.
In long:
I modified my ps-log.sh a bit, ran it several times and saw, that
lightdm sometimes appeared in the log right before the file was
this buggy behaviour kept occurring frequently so have tried sever
things.
the problem still occurs after:
removing all plugins.
starting in thunderbird safe-mode.
removing and creating an entire new user profile.
the problem disappears after:
disabling the visual effects.
