After allowing less secure apps in my google account security settings (https://myaccount.google.com/security#connectedapps), I was able to save a writer document on my google drive by only providing e-mail address and password. Just tested again with libreoffice 6.0.3 in bionic, after we explicitly enabled the google drive API for the project that holds the API key used in libreoffice (it was not enabled previously). gdrive-client-id and gdrive-client-secret differ between the deb packages and the snap.
