Some further testing on Ubuntu 18.10 (dev branch) + GNOME 3.30 later: The situation somewhat normalized after removing several applications like GNOME Documents, Weather, To-Do and some others. The tasks in Evolution (and/or GNOME Calendar and the calendar in the notification area) still disappear, but reappear when entering a new task in Evolution. Everything seems back to normal from there, until the issue reoccurs after closing and restarting evolution.
