A few months ago I retried to reset my LibreOffice profile while
starting LO in "safe mode" and ... it worked. The issue disappeared.
Strange as this was something I tried earlier (before attempting to test
the issue with a clean user account). But anyways that solved the issue.

I gave it a try and well, with a new user and a "clean" profile, no problem.
LibreOffice works ok.
So I decided to logon back to my user account and wiped out the
.config/libreoffice folder completely, wiping out all my preferences... well to
no

Could you try on your machine to maybe create a new user and see if it
has the same issue? Could you add the 'journalctl -b 0' log after
triggering the issue?

@Heather Ellworth: I just tried to completely remove libreoffice as you
suggested, then re-enabled Libre Office's PPA, then reinstalled as you
suggested. But to no avail. Libre Office still immediately crashed
whenever I try to create a new or open either a Writer document or a
Calc spreadsheet.
@Heather Ellsworth: Thanks for the advice, I'll try and post the results
here.

LibreOffice 7 Writer and Calc crash
Hmm it sounds like something went wrong with the update. Could you
please just try to uninstall all libreoffice packages and then install
LO7 from the ppa?
1. Remove the current libreoffice install
$ sudo apt-get remove --purge libreoffice*
2. Add the ppa and make sure that the libreoffice 7.0
