Should I always propose the debdiff with the release name instead of
UNRELEASED even though it is unreleased at that given point? I'm used
not to, but maybe that's something particular of Gnome[1].

In your changelog entry, it shows 'UNRELEASED' as the distro, but that should
be 'noble' now.
It would also be worthwhile to mention this bug # in the changelog, so it
should look like:
