I use Ubuntu 17.10 and simple-scan 3.26.3.
1) The choice for scanning mode is "Text" or "Photo".
2) The preferences dialog allows to specify different values for "Text
resolution" and "Photo Resolution".
For the non-guru user some kind of weak logical conclusion is that

As a user I like to know what happens inside things.
I would like a combo-box in "preferences" giving the following choices for
saving to pdf:
1) Jpeg or zlib (smallest one chosen for each image) -> default
2) Jpeg only (lossy)
3) Zlib only (lossless)
