I can observe the issue on artful with libreoffice 5.3.3-0ubuntu1 and
fonts-freefont-otf 20120503-6. Indeed toggling the style to bold makes
the » appear/disappear.

Not going to make it a classic snap after all, but a trivial patch fixes
the issue (https://git.launchpad.net/~osomon/+git/libreoffice-
snap/commit/?id=9184c01), and it will soon not be needed any longer
(when https://github.com/snapcore/core/pull/35/files is released in an
updated core snap,
Closing now as this was a test snap that was never published anywhere,
and the issue was resolved (note that I've reverted to strict
confinement).
