My honest advice is not too invest too much time on this project. Yes you will learn about software development and the C++ language on higher level projects. However the libraries in OpenOffice are not all that used on the mainstream. I would recommend to pick up a project with Qt5 framework

Bare in mind most of AOO is based on C++ code. So this would be most of the actual development time. There are many bugs that have been documentated, so before squashing them, you should read the wiki and also consult the list for possible outdated documentation. This is one of the biggest hurdles
