Is there any way to shut off the wireless on the vanilla G1G1 laptops
so that they may be used on an airplane legally? I am about to fly
with mine.

Yup. Open up the Terminal activity, then:
sugar-control-panel -s radio off
You can '-s radio on' when you're back on
