Take what Slimserver chooses in the random mix and save it to a
playlist. Then chop off what you don't want (the start of the next
album).
The randomness isn't live and won't be a total surprise; if that's
what you want, I don't have an answer.

No, it's not possible. Random Album Mix will pick an album at random,
play it then pick another.
