Did you figure something out? I have similar and would like to achieve
the same i.e. TV audio out and into Squeezebox/LMS infrastructure (via
ethernet) or into nearby Raspberry PI with DAC and AMP to kitchen
ceiling speakers.

You can however use a 2 way USB sound card such as a Behringer UCA202
which will give you 16/44.1 in and out.
piCorePlayer will see the card as an output out of the box but you will
need to use additional modules which may not be available in pCp to get
LMS to hear its input
