I created a python hier block using signal source and a VCO, but I want to
be able to control parameters like amplitude, sensitivity etc il real time
using sliders.
I used callback tag on xml together with the set method but it does not
work, the parameters does not seem to change at all

With latest gnuradio the scope view refuses to work in my flowgraphs.
Execution ends completely without any error message. Removing the block and
putting it newly into the flowgraph changes nothing. Disabling the scope
makes the projects work, the water fall works without issues.

In addition to what Rich said, it's possible that the XML file has a
syntax that GRC doesn't understand;
run
gnuradio-companion
from the console and watch the textual output of it on that console.
