I intend to set up a mail server for a few domains with
Dovecot/Postfix/MySQL/DSPAM and antispam plugin.
The better solution to manage users would be to set up a ldap server.
So, do anyone have ever set up this kind of server with dovecot ?
Any advice that would help me ?

I have running the older debian/sid dovecot 1:1.0.15-2.3 again, now with
kernel 2.6.27-10.slh.1-sidux-686 and the issue seems to be fixed. So I
recommend to use at least 2.6.27.10.

I'd like to host multiple domains though a central dovecot proxy -
however, I need to present different certs to different hostnames
(which are on different IPs).
I can't see a way to this in the documentation, is it possible?

Not with Dovecot itself. You have to use something like stunnel
instead and redirect the connections to localhost:110/143 instead,
for example.

You can't do this with a single instance,
