Emails are sent by dspace-api:org.dspace.core.Email.  It only writes to the 
log if sending is disabled (so that you can see the message that would have 
been sent, if it were enabled).

If you have access to the logs of the message transfer agent (sendmail, 
exim, postfix, whatever) then you should be able to find log entries for 
each message sent, but it will be logging only what is important to email 
administrators.
