Hi Nelson,

Apologies for the delayed response. I just stumbled on several small bugs 
in the database Docker scripts which were fixed 
in https://github.com/DSpace/DSpace/pull/9490 (and backported to 7.x).  
It's possible you were seeing one of those errors, as the root problem you 
describe is that the database did not startup properly.

I'd recommend pulling down the latest code and trying the Docker 
installation again.
