I'm working on a customized latex-export-class for a CV.
I noticed that if you skip a level in the outline structure (cf. example below)
it is not exported to latex. Is there a reason for this or could this be
changed easily? If so I would appreciate it a lot!

You can set the CATEGORY property of each customer as the customer name,
for instance. If you need more context, set the CATEGORY property of the
project with something that tells you the customer and the project.

One solution might be to tangle the LaTeX code blocks instead of
exporting the buffer to LaTeX. I like this approach--the org-mode
buffer can be full of meta-data (and messy) but I retain fine control
over the LaTeX output.
