Maybe it isn't in customization. Try C-h v bibtex-BibTeX-entry-alist
bibtex-BibTeX-entry-alist is a variable defined in `bibtex.el'.
You have to set it with some elisp code.

bibtex-BibTeX-entry-alist in the Bibtex customization group.
