You can't change it permanently at boot time.
You can select system each time at boot or you can
edit "default=0" value in /boot/grub/menu.lst in Ubuntu (with sudo).

Ubuntu can make flash drive bootable with Ubuntu Live CD on it.
It is under System->Administration->Create a USB startup disk.
So, if you just point it to EMC2 .iso, it will create EMC2 live flash drive.
