The release date is tied to the release of Firefox 62. At this time, it is
not possible to change it, sorry.

I've thought about doing something like this for CCK2, but I don't have
anything to report yet.

I am working on making the policy documentation at least call out which
CCK2 option corresponds to the policy mapping.

Unfortunately there isn't a 1 to 1 mapping for a lot of things (and
preferences is a completely different story)
