OK, I investigated the Firefox source code and found an undocumented (maybe 
new) option:

TaskbarShortcut=true|false

Which works as expected.

no, Firefox is not the default browser. Neither after an upgrade nor a clean 
install.

After install, is it the default browser?  That automatically gets it pinned.  
I have to manually do this with v45ESR, but maybe it's automatically setting it 
as the default on install with v52ESR (and therefore pinning it)?

taskbar on installing. That didn't happen before with Firefox 45 ESR. Does 
anyone know how to disable this?

This is how I install Firefox:

"%~dp0Firefox Setup 52.0.1esr.exe" /INI="%~dp0installer.ini"

Installer.ini content:
[Install]
DesktopShortcut=true
StartMenuShortcuts=true
MaintenanceService=false
