You can only sort by one or the other, but there's a workaround.
By the "Show" selection box right below the menu bar select "Unread
Messages" and then sort by date.
Don't forget to select "All

As previously discussed, I wish to have mail sorted so that first any
UNREAD messages are at the top, then sort by date in a descending
