Yes, in the Help menu of Evolution under Contents. If that option does not
show up in your distribution you might need to install another package, such as
evolution-help.
The same manual is available at

Using Evolution 3.4.3 when I go into preferences - account-edit
There is a click option: Make this account my default account.
If I click that and then click apply the next time I edit the account
that option is not clicked (or chosen).
