You also could use gesettings to change evolution's settings.
Right now I disabled spamassasin ;).
$ gsettings list-schemas | grep evolution | grep -e bogo -e spam
org.gnome.evolution.bogofilter
org.gnome.evolution.spamassassin
$ gsettings list-recursively org.gnome.evolution.bogofilter
