Mpegts udp suffers from excessive jitter.
This has been fixed only four weeks ago.
Check that your ffmpeg is recent enough.

I assume that you have correctly set the audio to embedded in Desktop Video
Utility ?
Your console ouput is what I get with my decklink card (studio 4k) which is
working fine for audio capture.
The audio input stream is recognized.
The Shuttle is notoriously bugged.
