I would use the tee filter to output 3 srt streams.
This single output command line works perfect:
ffmpeg.exe -report -f gdigrab -framerate 25 -offset_x 1063 -offset_y 147
-video_size 854x480 -draw_mouse 0 -show_region 0 -i desktop -filter:v
"scale=-2:720" -vcodec libx264 -x264-params

but when I use:

[tee @ 01e002137280] All tee outputs failed.
Could not write header for output file #0 (incorrect codec parameters ?):
Invalid argument
Error initializing output stream 0:0 --
