The answer might differ, depending upon the specific selection to which you refer, but I would venture one reason might be copyright. If one wants only the tune, and the words and music are under different copyrights, by not printing the lyrics one needs deal with only one copyright holder instead of two. A second consideration might be the intended use of the material. If its intended use is as background music where the words are not going to be sung, then again, why deal with a copyright holder you don't need to deal with?
