As to the last, if you use
sudo dpkg -r --force-depends
to remove GS8, then immediately install system-ghostscript, you will be
all right, except possibly for packages built against GS8 that won't work
with GS7.

I'm upgrading gimp-print for OS X. The GimpPrint Readme strongly suggest to
install ESP-GhostScript. I don't know which are the real differences
between this and a fink installed GS installation.
I have already installed fink's GS 8.
First question, partially OT: do you think that I really need ESP
