I've just added sextractor to Fink's distribution, unstable tree. It should take one hour at the latest to reach the rsync servers, or immediately if you use CVS for selfupdate. Run fink selfupdate fink list sextractor until it shows up. It'd be great if you tested that. On the other hand,
