I would use the editField() method to update the dataProvider as you go. When you are ready to submit, iterate through the dataProvider, check the value of the field you updated with editField. If it is true, push an element on a new array. Submit the new array. Or, create a new submit array on initialize, then add or remove elements as needed from within the cellEdit handler. Then it will always be ready to submit.
