I'm either going to get the the 3000 or 5000and I have a
question on the 5000 it says it comes with its own built in sound
card so I dont have to get a sound card
Is the 3000 the same? Well they both do PSK31 and all of the other
digital modes?

Yes, both the FLEX-5000 and the FLEX-3000 have built-in A/D D/A
convertors. This was the function that was provided by the sound card for
the SDR-1000.
Both the FLEX-5000 and the FLEX-3000 run the same software, PowerSDR.
Therefore both radios have the same capabilities, except for those

Well, strictly speaking you don't NEED to use VAC. You can still use
actual cables to connect the rig to a computer soundcard.
