Flightgear does work on Windows 7.
However if you plan to compile frequently you have to be quite good in
helping yourself, because compile problems may arise from time to time.

Make sure you get an install Windows7 CD and create a dual boot, that's
what I,ve got , although I rarely use m$ wind.

I see no reason why 64 bit wouldn't work, but I haven't used Windows in
ages(nor have I compiled anything on it).
