I read http://xmlgraphics.apache.org/fop/faq.html#pdf-characters and puted
fo:inline font-family=Symbol ... in each line as it is explain but it
doesn't work.

Is there an other solution?

This is because the Symbol font also does not have glyphs for the requested
characters. 
Try a Unicode font, or at least, look for a custom (TrueType or Type-1) font
that is guaranteed to to have those glyphs.
