Is there a style guide somewhere that states a bullet item should not be
all boldface?

Or, it is the logical conclusion that when you alter the style of ALL the text
of a paragraph you really meant to have a different default font for that
instance.

In fact, I'd find it hard to _not_ type a space after a period, regardless of
where in a paragraph it occurs.
