Absolutely Incredible Blueberry Pound Cake
Yield: 16 servings

2 cups granulated sugar 
1/2 cup light butter 
4 ounces low-fat cream cheese, softened 
3 large eggs 
1 large egg white 
3 cups all-purpose flour, divided 
2 cups fresh or frozen blueberries 
1 teaspoon baking powder 
1/2 teaspoon baking soda 
1/2 teaspoon salt 
1 (8-ounce) carton lemon low-fat yogurt 
2 teaspoons vanilla extract 
cooking spray 
1/2 cup powdered sugar 
4 teaspoons lemon juice 

Preheat oven to 350 degrees . Beat the first 3 ingredients with a mixer on 
medium speed until well blended (about 5 minutes). Add eggs and egg white, one 
at a time, beating well after each addition. In a separate small bowl, combine 
2 tablespoons flour and blueberries and toss well. Mix remaining flour, baking 
powder, baking soda, and salt separately and add to prepared batter alternately 
with yogurt, beginning and ending with flour mixture. Fold in blueberry mixture 
and vanilla. Pour cake batter into a 10-inch tube pan coated with cooking 
spray. Bake at 350 degrees until a toothpick inserted in center comes out 
clean, about 1 hour and 10 minutes. Cool cake in pan for 10 minutes; remove 
from pan. Combine powdered sugar and lemon juice in small bowl. Drizzle over 
warm cake. Cut with a serrated knife and serve.

Turkey Noodle Soup Mix
This is a great way to use leftover turkey.

1 cup uncooked fine egg noodles
1 1/2 Tbsp. chicken-flavored bouillon
1/2 tsp. ground black pepper
1/4 tsp. dried whole thyme
1/8 tsp. celery seeds
1/8 tsp. garlic powder
1 bay leaf

Combine all ingredients in a medium bowl. Store in an airtight container.

Attach this to the Jar

Turkey Noodle Soup

1 package Turkey Noodle Soup Mix 
8 cups water 
2 carrots, diced 
2 stalks celery, diced 
1/4 cup minced onion 
3 cups cooked diced turkey

Combine the Turkey Noodle Soup Mix and the water in a large stockpot. Add the 
carrots, celery, and onion and bring to a boil. Cover the soup and reduce the 
heat to a simmer. Simmer for 15 minutes. Discard the bay leaf. Stir in the 
turkey and simmer an additional 5 minutes.

Make Ahead Tip: These macaroons are best eaten fresh, but will keep for up to 5 
days at room temperature.   
RECIPE INGREDIENTS
 
For Outrageous Macaroons:
 
1 14-ounce can nonfat sweetened condensed milk 
1 teaspoon almond extract 
2 cups sliced almonds 
2 cups coconut flakes, preferably unsweetened 
1/2 cup dried cranberries 
1/2 cup chopped shelled pistachios 
2 large egg whites 
1/4 teaspoon salt 

For Garnish (optional):
 
3/4 cup bittersweet or semisweet chocolate chips 
1/4 cup dried cranberries 
1/4 cup chopped shelled pistachios 
   
RECIPE METHOD
 
Position racks in upper and lower thirds of oven; preheat to 325°F. Line 2 
large baking sheets with parchment paper or silicone baking mats.
 
Whisk condensed milk and almond extract in a large bowl until combined. Pulse 
almonds in a food processor (about 10 quick pulses) until broken unto small 
pieces. Stir the almonds, coconut, 1/2 cup cranberries and 1/2 cup pistachios 
into the condensed milk mixture.
 
Beat egg whites and salt in a medium bowl with an electric mixer on medium-high 
speed until soft peaks form, about 1 minute. Fold 1/2 cup of the egg whites 
into the coconut mixture. Add the remaining egg whites, gently folding into the 
mixture until just combined. Drop 1 teaspoon of dough onto a prepared baking 
sheet and top with another teaspoon of dough, making a double-tall macaroon. 
Repeat with the remaining batter, spacing the macaroons 1 inch apart.
 
Bake the macaroons, switching the pans back to front and top to bottom halfway 
through, until the coconut is lightly golden, 18 to 22 minutes (sweetened 
coconut will brown faster than unsweetened) . Let cool on the pans on a wire 
rack until cool to the touch, 30 minutes.
 
Optional garnish: Place 1/2 cup chocolate chips in a microwave-safe bowl and 
melt in the microwave on Medium in 30-second bursts, stirring after each burst 
to ensure even melting, until completely melted. (Alternatively, melt the 
chocolate in a double boiler over hot water, stirring constantly). Stir the 
remaining 1/4 cup chips into the melted chocolate until smooth. Drizzle or 
spoon the melted chocolate over the top of each cooled macaroon; sprinkle with 
cranberries and pistachios. Let the chocolate dry completely before storing or 
packing.

Summertime Pasta Salad 
I got this recipe out of the coupon section years ago and just finally 
tried it. It's very light and fresh. 
 

1/2 cup white vinegar
1/2 cup vegetable oil 
1 teaspoon granulated sugar 
1/2 teaspoon salt 
1/2 teaspoon pepper 
4 cups twirly pasta, cooked then chilled 
1 1/2 cups broccoli florets 
1 medium red pepper, cut in thin strips 
2 cups cooked ham, julienned 
1 cup carrot, sliced in thin strips 

Place first 5 ingredients in a jar; shake until ingredients are well 
blended. 
Combine dressing with remaining ingredients and toss. 
Can be served as a side dish or on lettuce leaves for a meal.

Taco Lover's Pasta Sauce

8  ounces lean ground beef 
1  large onion, chopped 
1  medium green, red, or yellow sweet pepper, seeded and chopped 
2  cloves garlic, minced 
1  15-ounce can tomato sauce 
1  14 1/2-ounce can diced tomatoes, undrained 
1 1/2  teaspoons chili powder 
1/4  teaspoon ground cumin 
  Salt and black pepper 
10  ounces whole wheat or regular dried pasta 
2  tablespoons snipped fresh cilantro 
1/2  cup shredded Monterey Jack or cheddar cheese 

In a large saucepan cook beef, onion, sweet pepper, and garlic over medium heat 
until beef is browned. Drain off fat. Stir in tomato sauce, undrained tomatoes, 
chili powder, and cumin. Bring to boiling; reduce heat. Simmer, uncovered, for 
10 to 15 minutes or until desired consistency, stirring occasionally. Season to 
taste with salt and black pepper. 

Meanwhile, cook pasta according to package directions; drain. Just before 
serving, stir cilantro into sauce. Serve over hot cooked pasta. Sprinkle with 
cheese.
