Easy Breezy Lemon Pie
'As easy as pie' describes this instant pudding pie.
Estimated Times
Preparation Time 10 mins.
Cooking Time 2 mins.
Standing Time 35 mins.
Ingredients
2 1/2 cups 2 % milk, cold
1 package (3 1/2-oz) instant vanilla pudding
3 lemons, juiced
1 9-inch graham cracker crust
2 cups mini marshmallows
Directions
Preheat broiler.
In a bowl combine cold milk, pudding mix and lemon juice. Mix well. Pour into
pie crust and top with marshmallows. Broil for 2 minutes or until top is brown.
Remove from broiler; cool for 5 minutes on a wire rack, then transfer to
refrigerator. Refrigerate until pudding mix congeals.
NOTE:
Watch the pie while it broils as it will brown very quickly.
Using chilled milk allows pie to congeal rather quickly.
